Soccer Cookies 2012

Soccer has come to an end again, for two of my children.  This year I was an assistant coach to the 8 year old girls team.  For the end of the season I made them soccer cookies as a treat.  (I copied last year - but apparently forgot to outline the cookies) I am still happy with the way they turned out. 


A few years ago I had an awesome sugar cookie recipe, then I lost it.  I have been making sugar cookies for a couple years now with an alternate recipe and everyone (aka my husband and children) loves them.  Then, it happened, I found my recipe!!!  Way to go cupboard organization :)  This recipe is the best!

I am so happy that I found it, I thought I would share it, this way I have a backup of the recipe as well!


Sugar Cookie

YIELD: I will update this when I make them again, but I think I got about 32 large circles from a double batch.

Ingredients

1 cup of butter
1 large egg
1 cup of sugar
1 tsp of vanilla
2 3/4 cups of flour

Preparation

Mix together first 4 ingredients until creamy.  Mix in flour.  Do not add too much.

Roll cookie dough.  I like to put a piece of wax paper on the counter, then dough, then one more piece of wax paper.  Roll the dough between the wax paper.  You do not need to add flour.  You may need to flip the "package" of wax paper and dough, pull up the paper and place down again.  Roll dough about 1/4" thick.  Use cookie cutter or knife to cut into desired shape.

Place on cookie sheet and bake in oven (400oF) for 6-8 minutes or until done.  I cook mine for about 6, when done the cookies should be barely brown in a couple spots on the edge of the cookie, the bottom should be pale like the top.  Let cool completely and eat as is or decorate.

My favourite icing to use is Royal Icing, the recipe I love is from JoyofBaking.com 

Royal Icing Using Egg Whites:

2 large (60 grams) egg whites
2 teaspoons fresh lemon juice
3 cups (330 grams) confectioners (powdered or icing) sugar, sifted

I squeeze the juice from a fresh lemon, mix all ingredients in a bowl of an electric mixer and mix until desired consistency.  

I find the consistency works great for outlining and I add a little water when I want to 'flood' the cookie.
